The iced matcha latte formula

Ippodo Tea's iced matcha latte recipe is simple: whisk 1.5 teaspoons of matcha (about 3 g) with 100 ml (3.4 fl oz) of 80 °C (176 °F) water, then pour it over 100 ml of cold milk and ice. In Ippodo's words, use one part hot matcha and one part cold milk, and top it off with ice. The calculator follows that 1:1 liquid ratio and scales it by the number of glasses.

Ice is the one variable Ippodo doesn't specify. We estimate about one cup of cubes per glass; it will melt a little as the hot matcha hits it, which is part of the drink's balance.

Why use hot water for an iced drink?

Matcha disperses much better in warm water than in cold liquid. Whisking with 80 °C water gives you a smooth, frothy concentrate, and the ice then chills it in seconds. If you whisk powder straight into cold milk, expect clumps unless you shake it hard in a sealed jar; our cold brew matcha method shows how.

Build it in the right order

  • Milk and ice first, in the glass
  • Matcha on top, poured slowly, for the layered look
  • Stir before drinking so the first sip isn't straight matcha

Make it stronger, or sweeter

Melting ice dilutes the drink, so many people prefer the Stronger setting (about 3.75 g per glass) for iced lattes. If you sweeten, stir syrup or honey into the hot matcha base, because granulated sugar won't dissolve in cold milk.

Iced matcha without milk

For a plain iced matcha, Ippodo prepares 2 g of matcha with 60 ml of hot water and chills it quickly with plenty of ice. Use the usucha setting and add a glass of ice.

Batching for a group

For a pitcher, whisk the matcha base in batches of two or three servings, combine the bases in a measuring cup, then pour over milk and ice in each glass. Pre-mixed iced matcha separates as it sits, so give it a stir right before serving.

Caffeine check

The ice and milk do not change caffeine: a 3 g glass contains roughly 57 to 133 mg, depending on the matcha. That is often less than an 8 oz cup of brewed coffee (about 95 mg by USDA data) at the low end and more at the high end.

Frequently asked questions

What is the ratio for an iced matcha latte?

Ippodo Tea uses about 3 g (1.5 teaspoons) of matcha whisked with 100 ml of 80 °C water, poured over 100 ml cold milk and ice: one part hot matcha to one part cold milk.

Can I make an iced matcha latte without hot water?

You can shake matcha with cold milk in a sealed jar, but it clumps more easily. Whisking it with a little hot water first gives a smoother drink.

How do I keep an iced matcha latte from tasting watery?

Use the stronger setting (about 25% more matcha), use plenty of ice so it chills quickly without fully melting, and serve right away.
